The Herbfarm chef, Jerry Traunfeld, visited Purple Haze many moons ago and taught the crew how to make this fabulous sugar. The oils from our sweetest lavender (Melissa) are absorbed into the sugar as they whirl around in an herb mill. Substitute a tablespoon of this sugar in a shortbread or scone recipe. Because lavender can embrace a recipe subtly or turn it into bitter perfume when overused, this sugar is a great way to start experimenting. Goes well with lemon, ginger, orange, berries and vanilla. Makes a delicious batch of French Toast.
